Ingredients:
- 1 cookie sheet
- Aluminum foil
- Cooking spray
- 2 sticks butter
- 1 cup plus 2 tbs brown sugar
- Sleeve of Club Crackers (salted)
- 1 package butterscotch morsels (you can use chocolate or semi-sweet chocolate chips, but butterscotch is preferred)
Instructions:
- Pre-heat oven to 350 degrees
- Put foil on the baking sheet and spray with cooking spray
- Spread one layer of crackers
- Melt butter and add brown sugar. Boil for 3 minutes.
- Spread over the crackers and bake at 350 degrees for 5 minutes.
- Add butterscotch chips – cover with tin foil for 3 minutes, then spread the melted chips over the surface
- Freeze for 20 minutes
- Cut into bite-sized squares
